First of all, I am not a nutritionist or a dietitian so I don't know how healthy this recipe actually is. Nonetheless, this is one of the freshest dishes ever. No cooking involved, just chopping, slicing and mixing. I've always had a thing for bread and vegetables and after browsing for bruschetta recipes, this is what I came up with.

Ingredients:
- 1 or 2 slices of whole wheat bread (French or Italian bread is preferable but currently ovenless so I chose whole wheat bread instead because it is easier to toast).
- A balanced amount of chopped (into cubes) carrots, paprika, tomato.
- Chop about a quarter or less of the onion and mince it.
- Use about 1 clove or more of garlic and mince it.
- Salt and black pepper to taste.
- About 1 tablespoon of extra virgin olive oil.
- Lemon.
Step by step:
- Slice a clove of garlic and gently stroke it on the bread slices.
- Toast the bread.
- Put the vegetables, minced onion and garlic into a bowl.
- Mix it.
- Add a pinch of salt and pepper.
- Pour in the extra virgin oil.
- Slice a part of the lemon and squeeze its juice into the bowl of ingredients.
- Mix it up real good.
- Place all of the ingredients on to the toasted bread.
- Serve and enjoy ^^
