Healthy Bruschetta

Fresh meal for any time of the day :)

Up close and personal :)
First of all, I am not a nutritionist or a dietitian so I don't know how healthy this recipe actually is. Nonetheless, this is one of the freshest dishes ever. No cooking involved, just chopping, slicing and mixing. I've always had a thing for bread and vegetables and after browsing for bruschetta recipes, this is what I came up with.

Ingredients:

  • 1 or 2 slices of whole wheat bread (French or Italian bread is preferable but currently ovenless so I chose whole wheat bread instead because it is easier to toast).
  • A balanced amount of chopped (into cubes) carrots, paprika, tomato. 
  • Chop about a quarter or less of the onion and mince it.
  • Use about 1 clove or more of garlic and mince it.
  • Salt and black pepper to taste.
  • About 1 tablespoon of extra virgin olive oil.
  • Lemon.
*Vary the amount, depending on how many portions you are serving.



Step by step:

  1. Slice a clove of garlic and gently stroke it on the bread slices.
  2. Toast the bread.
  3. Put the vegetables, minced onion and garlic into a bowl.
  4. Mix it.
  5. Add a pinch of salt and pepper.
  6. Pour in the extra virgin oil.
  7. Slice a part of the lemon and squeeze its juice into the bowl of ingredients.
  8. Mix it up real good.
  9. Place all of the ingredients on to the toasted bread.
  10. Serve and enjoy ^^
